Avocado Pound Cake





45-50 minutes


1 ½ cups Plain Flour

½ cup Sugar

1 Tsp Baking Powder

¼ Tsp salt

1 medium sized Avocado

2 Eggs

½ cup Maxigenes Goat Milk Powder- premade with warm water

¼ cup olive oil

1/8 cup Melted Butter

½ Tsp Vanilla Extract

¼ cup Mixed Chopped Almonds and Raisins


Preheat oven to 175 degrees and grease a loaf pan.

Mix all dry ingredients together in a large bowl.

Whisk egg and vanilla extract in a bowl. Add melted butter and oil to the egg mixture and whisk again. Add warm milk to the egg mixture and continue whisking until well combined.

Mash avocado and egg mixture. Add wet ingredient mixture to the dry mixture. Stir until combined. Add almonds and raisins, stirring well.

Pour the mixture into the greased loaf pan.

Bake in the oven on the middle rack for 45-50 minutes. Once cooked, allow the pound cake to rest for 10 minutes.
