Goat's Cheese Bruschetta Bites

Ingredients
2 sheets frozen puff pastry
6 cherry tomatoes, sliced
1/4 cup shallots, chopped
2 cloves garlic, crushed
1/2 cup Goat’s cheese, sliced
3 tbsp. olive oil
Salt and pepper, to taste
A small handful of fresh basil
Method
In a medium bowl, mix together the tomatoes, garlic, shallots, 2 tablespoons of olive oil, salt and pepper.
Thaw out the puff pastry as per the package instructions. Place 1 sheet of puff pastry on a lined tray of baking paper. Cut the pastry into small rectangles. Brush the tops with remaining olive oil and bake for about 8-10 minutes, or until brown and puffed.
Remove from oven and top with the mixed ingredients. Sprinkle with cheese and fresh basil. Return to oven and bake for about 2 minutes until the cheese melts, and serve.
