Ingredients
2 cups self-raising flour, sifted
100ml Maxigenes Goat milk, premade
3/4 cup cheddar cheese, grated
40g butter, cut into cubes
2 tbsp. fresh chives, chopped
1/4 tsp. salt
1/4 tsp. ground cayenne pepper
1 tbsp.cheddar cheese, for topping
Method
Preheat oven to 200°C and in a bowl mix together the flour and salt.
Rub butter through the flour mixture until it resembles fine breadcrumbs. Stir in the grated cheddar cheese and chives.
Make a well in the centre and add as much milk as needed (a little at a time) until dough has the right consistency.
Lightly flour a flat surface and gently knead the dough with your fingers. Flatten it to about 2 cm thickness and cut the scones with a medium cutter.
Glaze the tops with extra milk then sprinkle cheddar cheese and cayenne pepper on top.
Place scones onto a lined baking tray and bake for 10 - 15 minutes, until the scones are golden brown.
