Gingerbread Biscuits

Ingredients

1/4 cup sweetened condensed milk

2 1/2 cups plain flour

1 tsp baking powder

125g butter, cut into small cubes

1/2 cup caster sugar

¾ cup crystallised ginger, diced

1 egg

1/2 tsp ground ginger

2 1/2 tsp ground cinnamon

Icing:

2 tbsp. sweetened condensed milk

3/4 cup icing sugar

1 tbsp. water

Method

Preheat oven to 180°C and line trays with baking paper.

Beat the butter and sugar together until light and creamy.

Then add the spices, sweetened condensed milk, crystallised ginger and egg, mixing until combined.

Sift flour, baking powder, and stir into the mixture. Once formed, cover the biscuit dough in cling wrap and refrigerate for 10-15 minutes.

Cut the dough in half and roll out till 5mm in thickness. Cut out gingerbread men or other desired shapes using a cookie cutter. Repeat with the remaining dough.

Place biscuits on oven trays and bake in batches for 12-15 minutes until golden brown. Leave to cool for about 5 minutes on the tray before placing on a wire rack.

For icing- Mix the sweetened condensed milk, icing sugar and water to spread lightly over biscuits.
