Goat Milk Caramel Topping








4 cups Maxigenes Goat Milk Powder pre-made

1 cup sugar

2 Tbsp glucose syrup

1 cinnamon stick

1 Vanilla bean, split

¼ Tsp baking soda dissolved in 1 Tbsp water

2 Tbsp run or brandy


  1. In a large pot, mix together the goat milk, sugar, glucose syrup and cinnamon stick. Stir over medium high heat until the sugar dissolves and bring to a simmer.
  2. Remove the pot from the heat and stir in the dissolved baking soda. Stir until most of the foam disappears.
  3. Add the vanilla bean and cook on medium high heat and bring to a simmer. Cook for 60 minutes. Stir every few minutes.
  4. After the mixture turns pale golden, stir continuously for another 15 minutes. The mixture will get darker and thicken to syrup consistency.
  5. Turn off the heat and remove the cinnamon stick and vanilla bean and stir in the rum. Transfer to a jar and leave uncovered to cool for several hours/ Keep refrigerated, warm before serving.
