Orange Cake

1 1/2 cup self-raising flour, sifted
1/4 cup Maxigenes Full Cream milk (premade)
125 g butter, softened
1 orange, juiced and rind zested
3/4 cup caster sugar
2 egg

Orange Icing:
1 cup icing sugar mixture
2 tbsp. orange juice
2 tsp orange rind, zested
1 tsp water


Preheat the oven to 180°C. Grease a deep 20cm cake pan and line base with baking paper.

Place orange juice and rind into a medium bowl, stir in the butter, eggs, sugar, milk and sifted flour until smooth.

Pour the cake mixture into prepared pan and bake for about 40-45 minutes. Stand for 10 minutes before turning onto a wire rack to cool.

To make icing: Sift icing sugar into a bowl; stir in the orange juice and enough water to make a smooth paste. Stir in the orange rind then pour icing directly over the cake to set.
