Oven-Baked Frittata

2 tbsp. olive oil

1 onion, finely chopped

100g spinach

70g pancetta, chopped

1 red capsicum, chopped

1 green capsicum, chopped

6 eggs

1/2 cup Maxigenes Skim milk, premade

1/2 cup grated cheese

Method

Preheat oven to 200°C. Lightly grease a 9-inch ovenproof pie dish.

Heat oil in a frying pan on medium. Add onion and pancetta. Cook for 5 minutes or until onion is tender, then add spinach. Cook for a minute or until spinach is wilted, then remove from the heat.

Whisk together eggs and milk in a bowl. Add vegetables, onion mixture and half of the cheese; stir to combine. Pour into the pie dish and sprinkle with remaining cheese.

Bake for 30 minutes or until the top is golden brown. Serve warm.
