Potato Dumplings

Ingredients

800g mashed potato

1 large egg, beaten

Salt and pepper, to taste

1 1/2 cups plain flour

Method

Place mashed potato in a large bowl. Add the remaining ingredients and mix to form a smooth dough.

Heat water in a large saucepan. As it’s heating, prepare the dumplings. On a lightly floured surface roll portions of the dough into 1/2 inch thick cubes and repeat with the remaining dough.

Place dumplings into the boiling water and reduce the heat. Cook for about 3-5 minutes, then remove one to test if it’s cooked through. Transfer the cooked dumplings to a colander and drain.

* These are often served as an accompaniment to any roast with gravy or sautéed with onion and mushrooms.
