Potato Salad

Ingredients
1 kg desiree potatoes
2 shallots
6 tbsp gherkins, diced
Small handful of fresh parsley
Salt and pepper, to taste
Method
Boil the potatoes in salted water until tender. Drain the potatoes and once cooled, peel and dice into 3cm cubes. Finely chop the parsley and shallots.
Combine all the ingredients together in a large bowl and serve.
*Add 8 rashers of fried crispy short cut rindless bacon for a non-vegetarian alternative.
