Quick & Creamy Tomato Pasta

Ingredients
1/2 cup of Maxigenes Skim Milk Powder, premade
300g spaghetti
2 Tbsp butter
3 garlic cloves, finely chopped
½ onion, finely chopped
¾ cup thickened cream
1 cup tomato passata
¾ cup parmesan, grated
1 Tsp dried basil
1 Tsp chicken or vegetable stock powder
Method
- Cook pasta according to packet instructions, before draining, scoop out a cupful of pasta cooking water.
- Melt butter in a large pan over medium heat, add onion and garlic, cook until translucent.
- Add the remaining ingredients and stir until the parmesan is melted.
- Let the sauce simmer for about 2 minutes and season.
- Add pasta and toss through, cooking for another few minutes or until sauce thickens.
- Use the reserved water if you need to thin the sauce out.
- Serve with more parmesan and parsley.
- Cooked prawns, chicken, mushrooms or capsicum are great additions to this dish.
