Quinoa Breakfast Bake

Ingredients
1 ½ cups dry quinoa
1 1/5 cups strawberries, sliced
1 cup blueberries
½ cup raspberries
1 banana, sliced
¼ cup chopped walnuts
3 eggs
3 cups Maxigenes Goat Milk Powder – premade
¼ cup maple syrup or brown sugar
1 Tbsp cinnamon
1Tsp ginger
1 Tsp Butter
Method
Preheat oven to 190 degrees Celsius and grease a baking dish with butter.
Pour quinoa into the dish and lightly shake to distribute the quinoa.
Sprinkle the berries, banana and walnuts over the quinoa.
In a large bowl whisk eggs. Stir in the milk, syrup and spices into the eggs. Pour over the quinoa mixture.
Bake in oven for 1 hour until quinoa has absorbed all the liquid. Serve warm or store in the fridge for up to 5 days.
